Paw Paw Sticky Toffee Pudding

For the pudding:

  • 1 cup ripe paw paw pulp (mashed and seedless)
  • 1 cup pitted dates, chopped
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the toffee sauce:

  • 1 cup heavy cream
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract

Instructions:

1. Prepare the Date Mixture:

  • Preheat oven to 350°F (175°C).
  • Grease a baking dish or a muffin tin for individual puddings.
  • In a bowl, combine the chopped dates, baking soda, and boiling water. Let it sit for 10 minutes to soften the dates.
