Paw Paw Sticky Toffee Pudding
For the pudding:
- 1 cup ripe paw paw pulp (mashed and seedless)
- 1 cup pitted dates, chopped
- 1 tsp baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
For the toffee sauce:
- 1 cup heavy cream
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
Instructions:
1. Prepare the Date Mixture:
- Preheat oven to 350°F (175°C).
- Grease a baking dish or a muffin tin for individual puddings.
- In a bowl, combine the chopped dates, baking soda, and boiling water. Let it sit for 10 minutes to soften the dates.
